Drool...banana custard cake.

It’s no good! This is the recipe I am going to have a go at this afternoon! Just watching the video made my mouth water for one of those little squares of banana cake!! Got to do it.

The video shows it all. Do press that little square on the bottom right of the video because this recipe deserves to be watched on full screen.

FOR THE CAKE

15g Banana (roughly 1 banana)
4 Egg Whites
2 Egg Yolks
85g Sugar
100g Milk
120g Self Raising Flour
1 teaspoon Vanillla Extract or Maple Syrup
1/4 teaspoon Salt
1/2 Teaspoon Lemon Juice

bake on 160 for 25 mins


FOR THE CUSTARD

300ml Milk
2 Eggs
90g Sugar
2.1/2 tablespoons of Cornflour
1 teaspoon vanilla extract or maple syrup
pinch Salt.

In a bowl, whip the egg whites until just getting swirls, add the sugar gradually. Continue whipping until soft peaks and it doesn’t fall off the spoon or whisk.

In another bowl, add the milk to the egg yolks, add the pulped banana, whisk in.
Add the flour and continue whisking. Now add 2 or 3 spoonfuls of the egg whites and mix thoroughly. Take the egg yolk mix to the egg whites and gently fold in until combined.

Pour the mixture into a greased, floured and lined square or oblong cake tin. Put in oven on 160 for 25 minutes (do the cocktail stick test). Leave in tin for 5 minutes before turning out onto a wire rack (see video).

Before layering the cake with the custard, make sure you whisk the custard up first. Then put cake back in fridge for half an hour for custard to thicken up again before cutting into squares.
