Ok Annie, good luck - hope it's good for you.

They do stress to handle the dough as little as possible, unlike normal bread

Woke from my nap to find that my daughter had experimented with a recipe and produced gluten-free tea biscuits! She used rice flour and potato starch in place of wheat flour. She did use 1 egg and some yeast so I've made note in my food journal and will watch for any symptoms. They're so good I ate four of them.
