Hi everyone. Cooked this very quick recipe last night and sat down to dinner just over 40 minutes after first taking the fish from the fridge.
Can't be bad! I served it with Welsh Charlotte new potatoes and green beans.
The recipe I used was for two people using 3 fish fillets, (He who must obey loves 2 fillets on his plate) but of course if cooking for just yourself, cut the recipe in half .You can substitute the Cod for any firm fish such as Haddock, Halibut, Sea Bass, Dab, Coley or Pollock fillets if you prefer.
You will need: (for two people)
1lb skinless Cod fillets
15 Ritz Crackers, crushed
1/4 teaspoon Pepper
1/4 teaspoon Garlic powder
2 tablespoons Butter, melted.
Sea salt (didn't have so used ordinary)
Preheat Oven to 350F/180C/Gas4/Fan170.
In a medium bowl, combine the crushed crackers, pepper and garlic powder. Stir in the melted butter and mix until really well combined.
Season the fillets with Salt. Spoon cracker mixture over all. Bake on an uncovered baking sheet for 20 minutes, or until the cod flakes easily.
Basic fish herb crust is the same but with good old breadcrumbs. What's wrong with breadcrumbs? Why would I want to use crackers instead? Seems a change for change sake. Perhaps just a marketing gimmick to sell more Ritz crackers !
You've got me there Realist!! only know it tasted yum with the Ritz cracker topping. Probably the difference is that I imagine crackers have a crunchier texture than herb breadcrumbs. Like them all personally, breadcrumbs, batter, herb topped, panko, tempura, no topping but baked on slices of lemon, and now Ritz crackers!
