How to turn Milk into Whipping Cream

This is great for desserts such as Cheesecake and Mousse etc, it is just slightly darker than the pure white whipping cream that we are used to seeing, but the texture and taste is really nice.

INGREDIENTS
¼ cup (60g) full fat cold milk
2 Teaspoons (1 sachet) of unflavoured powdered gelatine or ager ager.
1 cup (8ozs / 240g) full fat cold milk
2 Tablespoons icing sugar.

METHOD

Scatter the powdered gelatine over the ¼ cup of cold milk, stir and let it stand for 5 minutes until it forms a sponge.

Once the 5 minutes are up you need to melt this so pop it into the microwave for 10 seconds or more. You just need to ensure the crystals have all gone and you are left with only liquid.

Pour the 1 cup of milk into a large bowl, add the icing sugar and stir it through. Add the gelatine and whisk it all together. . Place in the fridge for 25 minutes.

I find it much easier to use our cream making jug that we've had since the 70's
Yes, it still works and works well too.
