I would never buy frozen meat because you cannot judge the quality - however - I do buy fresh meat, vacuum pack it in portions, and freeze it my self. As Keezoy says - the secret is in the thawing!

I had an extra job once in a butcher’s shop. Unfortunately I sat too near the bacon slicer and ………………

Do you specifically ask the retailer if your fresh meat had been frozen at any time before you bought it?

Yes, in my opinion, there is a big difference, taste-wise, between fresh and once frozen meat.
Take hamburgers, for example. In the U.S. there is a chain called Wendy's that advertises its hamburgers are always fresh, never frozen, beef. The taste is dramatically better.

Yes, meat is aged, (I personally prefer an age of 21 days,) to enhance the flavor. During this time hanging in the cooler, the meat begins to 'break down' and become even more tender.
