Home made Scottish tablet

1 kilo white sugar,
1 tin sweetened condensed milk,
1 large cup of milk,
2 large table spoons of margarine,
30 drops of vanilla essence.

Mix the sugar and milk in a large pan, heat it gently until the sugar dissolves, bring to the boil and add the condensed milk, stirring continuously, boil for 25 mins, keep stirring, then add the vanilla, if you have a sugar thermometer the temp should be 118 C, take off the heat and beat vigorously until the mixture starts to stiffen then pour into a tray and let it set, it's very hot BTW so don't get burned.

A small piece is around 2,000 calories but what the hell.

Of course but when the family hears I've made some it disappears rapidly.
