Re: Liver and Onions

When frying liver and onions in the `old days` I used to wipe a thick slice of bread around the pan to mop up the juices and eat that - lush.

Mouth's watering now and I haven't had me tea.

Re: Liver and Onions

I must be the odd one out here, I couldn't eat liver if you paid me.
It's all slippery and slidey when raw . . . eek . . .and as it's cooking it stinks the kitchen out. I'm the same with kidney, that's all slippery and dripping blood too. Aggh.
I buy it sometimes for the dogs, my eldest one would kill for a bit of liver, so I like to treat her sometimes, but I really hate the smell of it cooking.
Things we do for love.

My dogs love it too. I often buy it for them as a treat. And whether I'm cooking liver for them or for myself, as soon as I start messing with it, they smell that blood and it brings them to kitchen pronto!

Re: Liver and Onions

For 5 years, wifey and I prepared $5 meals for the local community every Friday night.
Would usually have 100-120 but sometimes just over 200 (in the local Community Hall). All volunteer labour.
The population of this village is around 700.

For the first few years we never thought of "Lamb's Fry and Bacon" but ran one as a test - along with other choices of course.
The people went nuts.
Had to put it on at least every two or three weeks and went through heaps of the stuff.

One of our "staff" used to eat the awful offal raw as she was slicing .. that was hard for me to watch.

Re: Liver and Onions

Ate it raw? Oh gross. No way could I do that. Nice you and your wife did that, though.

I can eat steak almost raw, though. I'll cut steak and toss it in the pan for maybe a few seconds each side. When it comes to steak, I like it mid-rare, more rare than medium cooked. I like it bloody. But organ meats I could never eat unless they're thoroughly cooked.

I've never heard of Leek Pudding! Is it some kind of suet pudding?
It is, instead of steak and kidney leeks and onions are added,

I suppose its something that may have other possibilites.

Yes Nom matey, - bacon (suet) pudding!!!

Having made the suet pudding mix, roll flat on a (floured) pastry board. Lay strips of (streaky) bacon on the pudding to cover it all. Shake some sage & onion, and parsley & Thyme stuffing mix over the bacon. Roll the pudding either in foil or pudding cloth and seal it tightly. Place in steamer or saucepan and boil forapprox 90 mins. Serve with appropriate veg and gravy.

I love leeks. I tried them for the first time in my life about a year ago and I've been hooked ever since.
