Fresh Meat or Frozen? Can You tell the difference?

My late Wife & Various others, skilled in the cheffing arena, would always chose fresh meat, over frozen, because, they claimed Fresh Meat, Always tastes better.

Can you tell the difference?

Does it matter?

There are a couple of tell-tale signs: If it's very cold, and very hard, it's frozen.

[That's a great question. I do a lot of cooking and I use meat about 30% of the time. I prefer to buy meat fresh and cook it but I don't mind frozen if it hasn't been in the freezer for too long. I think the trick is to thaw it slowly in the fridge overnight. Some precious buggers that I have cooked for have sometimes been able to pick if it's been frozen but mostly if you do it right, most can't tell the difference. Especially if its been marinated and BBQd

My local butcher sells certain cuts frozen, defrosted: pigs cheeks.

They says it's a good if vacuum packed.

I freeze things like chicken thighs, don't have a vacuum packer, but make sure I expel the air and seal the bag.

Well..haha. Yeah. I don't have a vac packer either. Your method is what I meant.

I tend to lean toward fresh meat and always have.
But I have encountered a cold shoulder now and then.

You would be surprised how much so called 'fresh meat' had been frozen at some stage between abattoir and the cooking pot.
