Re: Xmas cakes and Puddings

I don't make a cake these days but I do make puddings and mincemeat
I have bought the fruit and will start making things when the weather turns nasty.

It's lovely on a cold winters day to have the house smelling of Christmas fruits and spices.

Do you all make fruit cakes? They do not seem to like them much here in the states but I love a thin slice with a cup of a tea in the evening.

Have you ever tried "clooty dumplings" Joan, they're Scottish steamed puddings wrapped in a cloth, but oh they're rich, 4,000 calories a slice.

Re: Xmas cakes and Puddings

Marguerite Patten's Microwave Christmas Pudding

Ingredients (serves 4-6)

50g Butter
50g plain flour
Half a teaspoon of mixed spice
75g white breadcrumbs
100g soft dark brown sugar
150g sultanas
75g Raisins
50g Dates
50g Cherries
125g currants
25g coarsely chopped peel
grated rind and juice of half lemon
2 eggs
2 tablespoon treacle
1 tablespoon golden syrup
50ml Orange Juice
50ml Apple Juice

Method:
Sieve all the dry ingredients together and mix well. Stir in all remaining ingredients until completely mixed. Lightly grease a half litre (1 pint) pudding basin and fill with the mixture. Cover with cling film and make a slit in the top to allow steam to escape. Cook on microwave high for 10 minutes. Allow to stand for 10 minutes after cooking. Sprinkle with brandy and serve.

Re: Xmas cakes and Puddings

It's not the one I've used before - I think I've 'passed on' the microwave cookbook it was in.
However, seeing it's Marguerite Patten it can't be bad (and it looks a lot like 'mine'. I think I used to soak the dried fruit in the juices overnight, before mixing)
Marguerite Patten must be about 130??? I've only ever known her as 'an old lady'

Sounds wonderful, all but the 4,000 calories

My Mum used to wrap her fruit cake in cheese cloth soaked in brady for a couple months before the holiday, always adding more brady only to keep it moist of course One slice and you were out!!
