It might taste Ok VM - but pink gravy and colourless root veg might take some stomaching. Have you ever tried?
I don't suppose lettuce would do too well either?

Steve a friend of mine of the "chuck it all in" school of cooking tried it once not only was the colour of the gravy a little bizarre but the beets themselves has become soft white tasteless balls.

I have pickled beets on the side when I fix ham and cabbage. They go well with the rather bland vegetables.
