Cajun Chicken Pita pockets
Ingredients:
3-4 medium chicken breasts, flattened and seasoned with Cajun spice or lemon and herb (your choice of seasoning)
1/2 cup Israeli cucumber, chopped
1/2 cup cup tomato, diced
1/2 cup salad onion, diced
1/2 cup lettuce, finely chopped
Mayonnaise
Store bought pita pockets
Olive oil
Method:
Coat a frying pan lightly with olive oil.
Cook the chicken breasts on medium heat until done. Slice into thin strips.
Warm your pita bread in a toaster for 30-40 seconds.
Cut along the edge, spread a thin layer of mayonnaise on the inside and half fill with the salad mixture and half chicken strips.
Top with a little mayonnaise and serve with salad.
Serves 4. Enjoy!
