veggie burger

Ainsley TV Chef did this years ago and I've done it many times. I don't eat it in a bun but as something to serve with say, poached or pan-fried fish ...

for two/three ...

1 carrot
1 courgette
1 onion
...................................grated then softed in wok then cooled
1 egg or just the white
1 or 2 slices of bread
1 dollop of peanut butter
seasoning.
...................................mix all together, shape and fry.

Sound nice d00d and quite easy to make. I sometimes make them out of the Quorn mince.

Had a nice bbq burger today along with some halumi, peppers and mushroom kebabs.

Thanks. I like them.

And I was deliberately vague with the measurements.

The ingredients could be adapted to suit, but it's the bread and egg white that bind it nicely and the peanut butter (crunchy is best) that gives a unique flavour.

I don't know .... chickpeas !? ... from the tin, rinsed, drained, squashed before adding to mix. High in protein.
