Here is a recipe. But it`s for `English pub style` onions and would be a bit strong as a cocktail onion.

It`s a good book if you want to get into pickling and I have chosen one for the American market

I often pickle onions with chilli . It makes for a taste with real bite !

Aye lad that there would certainly make your lips pucker up but your right there as my friend does this and they are grand.

I grow shallots for pickling and all I do is skin them and put them into jars with pickling vinegar, six weeks later they are ready to eat and with a lovely crunch too...

Wow those onions must be really pickled after 8 years! i wonder how long do pickled onions keep?
