Garlic Chicken and Peas with Barley Cous Cous
A nice relatively healthy dish
Ingredients (serves 1)
1 good quality chicken breast, diced
Fresh peas (handful)
2 small red onions, chopped
1 to 2 garlic cloves
Coconut oil
Optional: pitted olives
Salt/pepper (to season)
Turmeric (pinch)
How to
- Fry onions in a little bit of coconut oil
- Add chicken halfway thro the onions being done.
- Then add the fresh peas
- Then add some ground black pepper, salt and a tiny bit of turmeric.
- Then add some olives (optional)
- Then crushed some garlic and add that for the last 5 mins or so.
In the meantime do some cous cous. I used Barley cous cous.
When thats done, flake it with a fork and added to frying pan (with heat off) mix in all those lovely juices and finish by adding some good quality olive oil. Yum!
