What is your favourite recipe?

...but but but, one that is cooked from scratch with all natural ingredients - i.e no packet flavour enhancers/gravy mixes, such as bovril etc.

Oh Azz, impossible to narrow it down to one! Shrimp Creole, Ham and Cabbage for two. Yes, all from scratch, all natural ingredients.

No such thing as a favourite-how could one decide when there is a world of cookery out there?

Make stock,think about the flavours of each ingredient and then no need for flavour enhancers.

I think that tv progammes hacking on and on about `seasoning` ie smothering flavour with salt are just spouting a myth that results from damaged taste buds

I just love this thai-style soup;

2 chicken filets cut into small bite size chunks and marinated in the juice
of 1 lime
1 green pepper cut into bite size chunks
5-6 spring onions (chopped)
2-3 cloves of garlic (finely chopped)
1 red chili (finely chopped)
1 (rather large) chunk of fresh ginger (finely chopped)
1 cube chickenstock (sorry)
5 dl water
1 bx coconut milk

Fry the vegs, garlic, chili & ginger in a little oil until soft. Add water, cube and cocnut milk. Cook for 5 minutes. Add the chicken and lime - cook for 5 more minutes. Serve immediately.

Sure, Azz, use chicken stock (preferably home made or organic) instead of the water and cube.
