Burns Night 25 January

I went up to Scotland a few years ago for a job interview. Travelled up one day, stayed night, interview next morning then home.

Ended up that night in a pub in the middle of nowhere. Flagged floors and full of serious back packer and skiers.

Had Haggis tattie's and neeps and it was wonderful.

I've seen Haggis in my local butchers so am tempted to have a go at the weekend after Burns Night as my kitchen should be usable by then.

Does anyone else eat of the Haggis on here?

We are members of a Scottish country dancing society and, as it happens, will be attending their Burns Night tomorrow evening. Yes, I know it is a day early, but dances are routinely held on Wednesdays.

We shall certainly be partaking of the haggis, neeps and tatties, and do every year. I remember a couple of years ago they additionally put on some vegetarian haggis(!) as one or two members claimed to be vegetarians.

Quite apart from the dancing society, Marge and I quite often have haggis (plus the usual) just because we like it.

Of course, it doesn't do to think too much about what it's made of!

Yes matey, you'e not alone, haggis is wonderful stuff. Have haggis in my freezer which I will defrost and cook tomorrow with some swede, parsnips and sweet potatoes to make a mash and will make some hravy for it all.

Yes, they pipe in the haggis; there's an old man, he's almost blind sadly, who can play the pipes. One of the blokes recites the poem about the 'great pudding of the haggis race'.

Apart from the haggis, it is otherwise just a normal dancing night.

Re: Burns Night 25 January

Having lived in the North East of Scotland, we had some wonderful Burns' Night suppers, great fun, great food and a fun ceilidh. This was held in the village Church of Scotland hall, so no alcohol! This was got around by people going out into the car park fir their drams.

Re: Burns Night 25 January

Address To A Haggis

Fair fa' your honest, sonsie face,
Great chieftain o' the pudding-race!
Aboon them a' yet tak your place,
Painch, tripe, or thairm:
Weel are ye wordy o'a grace
As lang's my arm.

The groaning trencher there ye fill,
Your hurdies like a distant hill,
Your pin was help to mend a mill
In time o'need,
While thro' your pores the dews distil
Like amber bead.

His knife see rustic Labour dight,
An' cut you up wi' ready sleight,
Trenching your gushing entrails bright,
Like ony ditch;
And then, O what a glorious sight,
Warm-reekin', rich!

Then, horn for horn, they stretch an' strive:
Deil tak the hindmost! on they drive,
Till a' their weel-swall'd kytes belyve
Are bent like drums;
Then auld Guidman, maist like to rive,
Bethankit! hums.

Is there that owre his French ragout
Or olio that wad staw a sow,
Or fricassee wad make her spew
Wi' perfect sconner,
Looks down wi' sneering, scornfu' view
On sic a dinner?

Poor devil! see him owre his trash,
As feckles as wither'd rash,
His spindle shank, a guid whip-lash;
His nieve a nit;
Thro' blody flood or field to dash,
O how unfit!

But mark the Rustic, haggis-fed,
The trembling earth resounds his tread.
Clap in his walie nieve a blade,
He'll mak it whissle;
An' legs an' arms, an' hands will sned,
Like taps o' trissle.

Ye Pow'rs, wha mak mankind your care,
And dish them out their bill o' fare,
Auld Scotland wants nae skinking ware
That jaups in luggies;
But, if ye wish her gratefu' prayer
Gie her a haggis!
