Cooking with corned beef.

A facebook friend put a picture of her dinner up last night. Basically it was like a stew made with corned beef. It looked so tasty I asked her for the recipe. It's so simple. Potatoes, carrots, onions, water, oxo cube & a can of corned beef cubed. Cook altogether in a pan adding the corned beef about 5 mins before it's cooked. Serve with crusty bread.

Seems like it's something quick to make when there isn't much time to do anything more elaborate.

This is something even my (don't cook/wont cook) hubby could do. I'm going to try it soon - see if it's as nice as my facebook friend says it is..

Anybody else cooked with corned beef? If so - lets have your way of doing it please.

I make corned beef pies Carol. I sweat down until softened, equal quantities of onion, carrot and potato cut into a small dice and season well, then allow the mixture to cool Slice the corned beef and put alternate layers of the cooked vegetables and corned beef into the pastry base, cover with more pastry and bake in a hot oven. Serve hot with mash and gravy or cold with sweet pickle. Delicious.

Here in the North we call that meal a pan of Lobbies. Chuck whatever you want in, I don't add carrots think they change the taste. It's like you say Carol a quick easy meal but tasty.

Al likes corn beef Hash,thats mashed potato with slices of corn beef mixed up in it .

M&S do a nice corned beef hash, well my hubby thinks so but then he loves corned beef.

I make corned beef lobbies quite often with potatoes onions and carrots and seasoning including worcester sauce, I leave it for an hour or so when cooked to thicken then serve with crusty bread

I only eat corned beef now and again and it has to be with particular accompaniments. Corned beef sandwiches with Heinz Sandwich Spread. Corned beef with potatoes and beans, or with spouts and potatoes. Someone at work eats a corned beef salad with brown sauce and it turns my stomach!!
