I used to make my own curry powders with instructions from the Balti Cookbook. All spices dry roasted in a frying pan and then ground in a mortar and pestle. The resultant ground spices are added together to make curry powder, placed in sealed jars and left to `mature` for around two weeks before use. To give you some idea of the faff involved in making the stuff, cop for this.

All Chinese curry is, is Madras curry powder mixed with wholewheat flour used to thicken it. I suppose you could use ordinary plain flour or cornflour but the colour and taste wouldn't be quite right. Less of a faff buying it already made.
I made it at home, ergo, it is home-made.
