Triple Fried Chips.

Have you ever cooked them?

I learnt from a Heston Blumenthal tutorial.

They took a lot of practice to make for me.

Once you have that knack of preparing and deep frying them....they are fluffy on the inside,so crispy on the outside

Absolutely delicious...my son demands them with his deep fried beer battered coated fish....maybe demand is a little strong...insists sounds better.

... never heard of triple but double is a must ... first fry to cooking them, second fry to crisp them.

It’s a Heston thing. He does not fry them three times, he boils his chips before double frying them. Between each cooking he refrigerates them.

I am not a great fan of chips, Heston style or otherwise.

I rarely eat chips these days and no longer make them but I used to cook them twice years ago when I had a chip pan, once at a low heat to cook the potatoes and for a second time at a higher heat to produce a crisp outside.

An important part of making good chips is to use the right kind of floury potatoes like King Edwards.

I have had triple cooked chips when going out for a meal and they weren't a patch on the chips my Dad use to make when I was little, they were crisp and dry not at all greasy and cooked just once in beef dripping.

Double and triple fried chips is a load of BS, it's for people who couldn't get it right the first time. Old fashioned deep frying is an art and when done correctly cannot be beaten.

I can't recall the last time I made chips. I only buy them already cooked with or without gravy

Definitely no gravy on chips in this house - just a little salt and vinegar. I do have a friend who smothers hers in mayonnaise! YUk!

Damn - I want some chips now - and it isn't even 7:00am!!

Hi Pauline, Hi everyone. I very rarely have chips, but if having a family get together in the garden on a rare sunny day, I like to be well prepared with my three-times cooked chips as the family love them. I usually peel and chip 2 bags of red potatoes and boil them in water in batches for for about 20 minutes until they are soft.(large family). Once all the batches have been boiled and dried with kitchen paper. time for the next stage.

I put my chip frier to about 130C and cook them in about six batches until they just start to get an outer crust but still white. I let them cool then for about 20 minutes. I have a large oven pan that I then place them all in and keep them in the fridge until ready for the final cook.

For the final cook and to get that gorgeous fluffy inside and crispy outside golden colour, I put the Frier up to about 180c and cook them in batches again.

I have a special large serving dish that I serve them in. It really is a sight to behold to see them all tucking into those lovely chips.

However, as I say, that is only when I have a garden do, as with the amount I usually have to cook, it's very time consuming.

As for HWMO and myself, if we fancy chips we usually just indulge in a bag of McCains French Fries, as we personallly prefer them to fatter chips. Yum.
