Salads

Has anyone got any good healthy Salad recipes, mine seem to be a bit boring.

It needs to be something that is not going to raise my sugar levels, and I don't like lettuce or avocado.

Hi Susie I won't suggest spicy rice or pasta salads then.

I live on salads in the summer, I had 3 for lunch today one of them a coleslaw made of organic vegetables...
finely sliced...
sweetheat cabbage
fennel
red onion
carrots sliced into thin strips with a Julienne Peeler
dressing of small amount of dijon mustard/mayonnaise/olive oil/black pepper.

I only make a small amount of dressing if stirred with the vegetables in a large bowl it goes a long way.

I salads on a regular basis as it's full of nutrition.

My Salads are a little different to others as I really spice mine up but I, my husband and Dad love them.

Here is what I put in mine:

spinach
Chopped cucumber
chopped cherry or baby plum tomatoes
grated or julienne carrot (i love it)
sweetcorn
chopped spring onion
shredded cabbage
diced peppers
mixed beans

In a large bowl, combine all the ingredients In a large bowl,
I then drizzle olive oil, a little lime & lemon juice, lo salt, lazy garlic or garlic granules, a shake of turmeric (great health benefits) ground black pepper, smoked paprika. teaspoon of mint sauce and a little light mayonnaise.
I sometimes even add a little chilli powder as we love the spice and it goes in most of my food.

We had this for lunch today, Dad loves my salads.

I get it might be too spicy for some but if you like spicy give it a try, its yum, or we think so!

Oh, nearly forgot! I put a few nuts in the salad too

Me too. I love salads but come summer when we have local , fresh produce and grow our own variety of lettuce, tomatoes , onions, peppers etc., salads are even more yummy.

What I’d do is go online and click on salad ideas.

Caesar salad. I’m not sure if you guys get Renee’s Caesar Salad Dressings but that’s the one I use.

Grated or powdered Parmesan cheese
Fresh washed romaine lettuce leaves
Croutons or trail mix

Mix dressing with pieces of lettuce add cheese and garnish .

Greek salad

Romaine lettuce
Red Onion
Red or green pepper
cucumber
Cherry, plum or tomato pieces
Black olives ( I prefer big green ones )
Chunks of feta cheese

Salad dressing
Italian dressing
Basic:Olive oil & vinegar , oregano, thyme , black pepper, sea salt, sage

Chef salads can be lettuce, tomatoes, cucumber, radishes, onion, peppers, spring greens, carrots, red cabbage, peas, or anything fresh you’d like to add.then add your favourite dressing and add some interesting garnish. crunched up corn chips, ritz crackers, croutons. Maybe olives,? Hot peppers, chunks of cheese. Raisins or dried cranberries are nice or nuts. Trail mix goes nicely on salad.

Some people add eggs, ham, chicken, turkey, cottage cheese or some other form of protein on the side.

Salads are so diverse.

Bean salads are great also.

Here's one I love.


CRUNCHY THAI SALAD WITH PEANUT DRESSING

INGREDIENTS
Thai Salad-
• 2 cups kale , thinly sliced, or baby kale
• 1 1/2 cups napa cabbage , thinly sliced (BOK CHOI)
• 1 1/2 cups red cabbage , thinly sliced
• 1/2 cup red bell pepper , thinly sliced
• 1/2 cup carrot , shredded
• 1 mango , thinly sliced
• 1/4 cup cilantro , chopped (CORIANDER)
• 8 mint leaves , thinly sliced
• 1 tablespoon green onions , thinly sliced
• 1/4 cup peanuts , roasted, roughly chopped

Peanut Dressing-
• 1/3 cup peanut butter , natural creamy or smooth
• 2 tablespoons lime juice
• 3 tablespoons honey , or pure maple syrup
• 1 1/2 tablespoons rice wine vinegar
• 1 1/2 tablespoons soy sauce , low sodium
• 1 teaspoon sesame oil
• 1 teaspoon sriracha (SWEET CHILLI SAUCE)
• 1/2 teaspoon ginger , minced
• 1 clove garlic , roughly chopped
• 1 tablespoon water

INSTRUCTIONS
Thai Salad-
1. In a large bowl add kale, cabbage, bell pepper, carrot, mango, cilantro, mint, and green onions. Set aside and make the dressing.
Peanut Dressing-
1. In a blender add peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sriracha, ginger, garlic, and water.
2. Puree until smooth and combined, about 1 minute. Alternatively, the ingredients can be whisked together in a medium-sized bowl.
3. Add more water if needed to thin out the dressing if desired. Season with salt and pepper as needed.

Oh it is Bratti. Try it. You would be able to relate to the Maple Syrup part of it I'm sure.

They all sound wonderful.

Meg nothing wrong with spicy pasta or rice, I eat them, I love hot and spicy food, just can't eat Salad cream or dressings.

Sue I thought they would be too much carbohydrate, why no dressings
You could omit the mayonnaise and use a little lemon juice in the dressing instead.
