Left over lunch!
Today's lunch. Had some salmon and mashed potato left over from yesterday - just enough to make a couple of fishcakes.
While they were gently cooking - I spiralised a courgette, an onion, and a chunk of butternut squash. Added some diced tomatoes and mushrooms. Sprinkled that with chopped herbs from the garden - basil, mint and parsley.
Waltzed it all round a wok with a knob of Irish butter.
