I didn't have any spring onions so used my usual brown cooking onions and it still tasted gorgeous. Really tasty and easy and before adding cheese it can be frozen too. Lovely to use up that glut of courgettes many of us have at this time.
Halve courgettes longways, throw into boiling salted water, bring back to the boil, drain after one minute. Place in dish with boiled potatoes, cover with cheese sauce and grill.
