Never again..........

I've been into cooking for about 18 months now but have never before tried making a desert.
This afternoon SWMBO decided to prune one of our Nispero (or Loquat) trees. Still had loads of fruit on it but was making a right mess everywhere.
In a moment of madness I suggested I make a Nispero Crumble.

It's just taken me an hour to skin, de-stone and generally clean up the damn things. What a fiddling fa***g job.

I'll get back to you later and let you know how it's worked out, it's in the oven as I type.

Well it's cooked and it's really VERY nice. With a dollop of Greek Yoghurt.
Next time, a bit less fruit and more crumble topping.

Well chuffed with myself, first time I've ever made a pudding.

Well done RRS it sounds like a very exotic crumble, a bit of a change from rhubarb or apple.

I must confess to never having heard of a Nispero or Loquat tree. I'm pleased that the crumble turned out well for you though

Have another idea for you RRS to use up your Nispero. wash about 12 - 15 and place them in a saucepan. add 1/2 Pt water and 4 0z sugar. Heat gently (DO NOT!!! boil) until fruit is softened. Remove from heat and allow to cool. Cut open and remove stone. Place (cut side down) in a shallow oven-proof dish which has been previously greased (not necessary if you use a pyrex dish).

In a bowl sieve 6 oz plain flour and 2tsp baking powder. Add 4oz margarine, 2 eggs, 3 - 4 oz sugar, 2 tbls milk, 1 tsp vanilla essence. Beat together until thoroughly mixed. Pour mixture over fruit in oven dish and ensure most (if not all) fruit is adequately covered with the mixture. Sprinkle some almond flakes over mixture. Place in pre-heated oven at 180 oC for approx 35 -45 mins. Mixture is cooked through when a knife inserted in it can be withdrawn 'clean'

Serve warm with custard - bon appetite!!!
