Hi everyone, just found this recipe online and thought would give it a go at making this weekend. I have just bought some new non-stick fluted tart tins so what the hell, I'll have a go and see how it comes out. That 3/4 cup ground almond seems a lot though. I will have to have a look for almond meal methinks as the little container in my spice jar doesn't look as though there is enough to fill 3/4 cup.
Now I do have a picture but have completely forgotten how Meg told me to upload onto here. I have got it as far as below this box in the manage attachments. what now ?
1 cup of Greek yoghurt (low fat is fine)
1/2 cup of olive oil
3 eggs
the zest and juice of one lemon
1/2 cup of sugar
3/4 cup of ground almond (also known as almond meal)
2 teaspoons of baking powder
1/4 teaspoon of salt
2 cups of seedless red grapes (cut in half lengthways)
1.1/4 cups of plain flour
preheat oven to 350/180/gas 4
in a bowl, blender or stand alone mixer, mix together the yoghurt, , olive oil, eggs and the lemon juice and rind until well mixed together.
Add the flour, sugar, ground almonds, baking powder, salt and mix well.
Spray individual tart moulds with the olive oil spray and then divide the batter equally in the moulds.
Now press the red grapes (cut side down) equally between all the tarts until all divided
bake for 15 minutes or until a tester comes out clean.
This is delicious served perhaps with some Greek yoghurt and honey.
