Oh my gosh, I am pretty sure I can pick up the aroma across the wide Atlantic. Every boulangerie within 500 miles would give an eye tooth to have your expertise, Realist

The hours are terrible though, better to keep up the good work in your kitchen.

I realize, looking at this loaf, I have an addictive personality.

I use a bread machine. I've had several machines in the past with varying degrees of success. But My latest. A Tower. Gives perfect results every time. Even has a gluten free setting!

My second wife used to make Irish soda bread which was really nice slathered in nice butter. It was one of the few things she was good at.
