Au Gratin dishes

I'd like to post a few recipes but they require that you have Au Gratin dishes. See photo. Please let me know. These dishes come in a wide variety of sizes, but the ones you would need are for individual portions.

I have a good selection of those, Bakerman, both family size and individual. Looking forward as always - to trying your recipes.

Am having the Shrimp Creole a la Bakerman for dinner tonight!

Excellent. The amount of spiciness is totally up to your individual taste. Adjust spiciness PRIOR to finally adding shrimp.

CHICKEN TETRAZZINI

This recipe is my own variation on the American classic.

serves two
NOTE: If serving only one person, save the remainder for another dinner, by freezing it. NO, NOT THE PASTA.

2 TBLSP butter
1 TBLSP Olive oil.
2 large handfuls of sliced mushrooms
5 large garlic cloves, finely minced.
370 gram of chicken breast, cubed into bite sized pieces
70 gram good quality baked ham, cubed. fat trimmed off
1 can Campbell's Cream of Mushroom soup.
1 1/2 cup milk
1 lg bay leaf
1/8 tsp ground white pepper
2 TBLSP grated parmesan cheese. Divided.
1 TBLSP good quality DRY Sherry
enough SHORT spaghetti pasta for 2 people

Melt butter with olive oil in a large saute pan. LOW HEAT
Toss in sliced mushrooms and saute until mushrooms have given up their juices.
Add minced fresh garlic
Saute 1 minute while stirring. In a small bowl, set mushrooms and garlic aside.
Saute chicken cubes.Over low heat. Until cooked through. DO NOT BROWN.
Add cubed baked ham
Add 1 can of Cream of Mushroom soup
Add Milk, stir well.
Add bay leaf and white pepper.
Add reserved sautéed mushrooms and garlic.
At a bare simmer, cook for 30 minutes to meld the subtle flavors. If sauce becomes too thick, add more milk
TURN HEAT OFF.
Add 1 TBLSP of parmesan cheese
Add 1 TBLSP DRY Sherry., and 1 TBLSP parmesan cheese
let rest 30 more minutes. Locate and discard the bay leaf.

3/4 cup grated Mozzarella cheese.
Spaghetti pasta

When water is at a high rolling boil, boil pasta until al dente
10 minutes.
Drain well and put pasta in 2 au gratin dishes. pasta should NOT come above rim of au gratin dishes
Spoon tetrazzini over the pasta.
Pour remain sauce over the tetrazzini. the more sauce you have, the better.
Sprinkle grated mozzarella over the top
Sprinkle the 1 TBLSP of remaining parmesan cheese over the mozzarella.

Run the 2 dishes under a broiler. (the kind with the heat ABOVE) until cheese melts and it turns a deep golden brown
serve immediately.

Photo is of a very large portion for a family.

Wow - that sounds really delicious, Bakerman. have pasted it into my recipe file. Will buy some chicken tomorrow and try it out. Does it have to be tinned soup? Could I not use homemade?

Well, you could use home-made but in order to get that same intense mushroom flavor you'd have to spend 10 times as much money on fresh mushrooms. Not to mention the amount of extra work. Please try Campbell's cream of Mushroom soup first, and then if you feel like it go ahead and make your own from scratch.
