We love all mushrooms including ceps. I'm sure there are lot's of imaginative ways of cooking them, but they are very acceptable simply prepared in the same nway as "regular" mushrooms i.e stir-fried, in an omelette, poached, fried, whatever.Re: How to prepare ceps mushrooms?
I think that I may have done the wrong thing by freezing them. Do you think they will just turn to mush when I defrost them, or should I cook them from frozen? The more I think of it, the more I think I shouldn't risk eating it at all, but what a waste through my stupidity!Re: How to prepare ceps mushrooms?
My guess from experience (although we've never frozen them) is that they will turn to mush when defrosted. When preparing them normally there's always a bit of swishy stuff that needs to be washed off their bottoms.Re: How to prepare ceps mushrooms?
Actually it's big problem.Commercial buyers pay people to pick everything they can pick indiscriminantly, they get sorted later. Certain species sell for £50 per pound or more. A forest can get stripped of all fungi in days. You'll get a big fine if caught with silly large quantities
