Got to be salad it's getting too hot to cook again, cottage cheese or eggs or some ham for the meat eater(s). Just see what everyone wants when they get home.Re: What are you having for lunch/dinner?
Yesterday in Tesco picked a couple of chickens for less (just) than a fiver, only titchy things but ample for two. Anyway cooked one immediately and when it had cooled stripped off the breasts and made son a huge container of pasta salad, threw in everything but the kitchen sink. Today will strip the rest of the carcass, have some of the meat in a normal salad me self, and use the bones to make a stock for a soup for him tomorrow. Just to ensure the meat does not disintegrate I usually put some in the bottom of the container, then add the soup when it is cold. Not bad, three dinners from a chicken costing under £2.50. Well, yesterday I discovered that he'd eaten the piece of chicken I'd cooked for myself to have cold (he's not been eating chicken).
