Besoeker's travel

I've been around a bit and to some odd places. As some of you will know, we have recently moved and are still unpacking..
Came across this today. It is fossilised wood from the Sahara desert. It was given to me by one of the site engineers when I was on oilfield project in Libya a few years ago.



Not always a desert, it would seem.

May I reciprocate with what we had this evening?

Chipotle Salmon with Mango Salsa
*Course Main Course
*Cuisine Mexican
*Prep Time 15*minutes
*Cook Time 15*minutes
*Servings *-8 servings
INGREDIENTS
 1*large*wild Alaskan salmon fillet*approx 3 pounds
Wet Rub
 2*tablespoons*unsalted butter
 2*tablespoons*honey
 2*tablespoons*lime juice
 zest of one lime
 1/2-1*teaspoon*chipotle chili powder
 1*teaspoon*garlic powder
 3/4*teaspoon*salt
 1/2*tsp EACH*chili powder, ground cumin, smoked paprika, onion powder
Garnish
 1*recipe*Mango Salsa
 fresh lime juice
 chopped cilantro
INSTRUCTIONS
1. Preheat oven to 400 degrees F.
2. Line a large jelly roll pan with foil that extends 2” past the pan edge on each long
side (so you can fold the sides up). Lightly spray foil with nonstick cooking spray.
Place salmon in the center of the foil skin side down.
3. Whisk all the Wet Rub ingredient together in a medium bowl. Pour rub on salmon
and evenly rub all over the top. Fold up all the sides of the foil snugly around the
salmon (but don’t cover salmon). Let salmon rest 15-30 minutes to come to room
temperature (you can make the mango salsa during this time).
4. Bake salmon uncovered at 400 degrees F for 12-15 minutes (depending salmon
thickness), then broil 3 minutes.
5. Garnish salmon with fresh lime juice and mango salsa.

Excellent!

My thread was about travel but the different cuisines are a significant part of that. Not all good. But a few memories stand out. The freshly cooked sea bass on the south coast of Turkey, alligator steaks in Georgia, cray fish in Houts Bay, south of Cape Town.

A little bit of a reflection on my life, I suppose. Work/business got me many places. I wouldn't reverse it. Sure, for much of the business travel, most of what you saw was the inside of a hotel or an industrial plant.

Just a job.

I don't like salmon but I wonder if this recipe would work with tuna steak, do you think Bes?
