My Mum used to make this, and I've made it myself
I was the chef in an old peoples home, we used to make this regularly
It's very simple, and the trick, for want of a better expression, is to resist the temptation to make it too complicated
Ingredients -
onions
potatoes
carrots
a small amount of swede
corned beef
A generous amount beef stock, like OXO cubes, but not anything that will thicken it, like gravy powder
salt & pepper
minimum amount of water; adjust if needed; you can always add more, but it's not so easy to take it out
Roughly chop/slice/dice these
Put everything in a pan and simmer till the veg are soft, and the potatoes start to fall
The quantities don't need to be exact, work them out and adjust them to suit yourself
But there should be the same amount of spuds as everything else put together; remember, this is a cheap & simple dish
The lumps of corned beef will probably disintegrate; don't worry about it
Often served with pickled red cabbage
I've never frozen it, but I don't see why not, just like any other stew or casserole
In fact it would be easier to make up a big batch then freeze smaller portions - again just like any other stew or casserole, it tends to grow on you!
